I.heart.brunch

Because its Sunday, I thought I should start looking at creative brunch ideas. After posting about the Poptart Pops I got this genius idea that I could do a breakfast cocktail reception right after the morning wedding and then do serve lunch, instead of doing a brunch. I knew there had to be a wealth of miniture breakfast options available and I was right!!!

I've never had egg benedicts (I am not really an egg person so poached eggs kind of scare me)but they look good and people seem to like them.

I don't eat bacon and I don't eat eggs but these look really good. I figure if you are going to do comfort foods then it really has to be about the presentation. It's really all about presentation.

Mmmmmm...french toast and strawberries. I think mini french toast slices could also be pretty adorable and delicious, or french toast chips with a syrup dip. (I really should cater my own wedding...JK. kind of.)

I heart beignets. If you've never had a beignet you are really missing out! I have no idea if you can make beignets in CR but I will make them myself if I have to.

Pop Tart Pops

As I've mentioned, I am doing an early morning wedding (because I couldn't possibly wait all day to get married...plus it means I get to be a bride for longer, wear my dress for longer, and celebrate with my friends and family for longer...win,win,win)

That being said, we are doing a brunch reception so I am always looking for creative brunch ideas. That's when I found these! How adorable are mini poptart pops!!

OUR FAMILY’S ”We-Love-Bakerella” TRIBUTE TREATS: Bite-Size Cherry PopTart Pops

FOR THE TWO-BITE POPTARTS
1 c. fresh cherries, pitted and diced
3 T. sugar
2 T. cornstarch
2 T. water
1/2 tsp. almond extract
1 pkg. prepared pie crusts

FOR THE POPS
wooden popscicle sticks

FOR THE GLAZE
1 c. powdered sugar
1-2 T. milk
1/2 tsp. vanilla
food coloring and sprinkles (optional)

In a small saucepan, combine cherries, sugar, cornstarch and almond extract. Heat on stove over medium heat until mixture has thickened. Remove from heat and allow mixture to cool. Unroll pie crusts and using a pizza cutter to slice them into 1 1/2″x 2″ rectangles (I used a ruler to measure mine into equal sizes. Just use a butter knife to score your pie crust before cutting).

Place a wooden popscicle stick on top of one of the cut rectangles, then spoon a small amount (about 1 1/2 tsp.) of cooled cherry filling into the center of the pie square, taking care not to get it near the edges. Gently lay a second rectangle over the top of the cherry filling. Press the edges of the rectangles together with a fork. Transfer to a baking sheet. Bake poptart pops in an oven preheated to 400 degrees for 8-10 minutes, or just until the edges begin to brown.

In a small bowl, combine powdered sugar, milk, and vanilla to make glaze. Tint with food coloring, if desired. Spoon over cooled poptart pops, sprinkle with colored sugar, and allow to the glaze to harden slightly before serving.

Amazing!

Keeping things simple

Today I read the most amazing post on A Los Angeles Love. The lovely blogger on a LA Love spoke about the envy (and anger) that comes with planning a wedding on a budget. I definitely know the feeling, but the thing that really caught my eye was where she says " We have a wedding in which we've edited away the fluff, out of sheer necessity, and focused on a day and rituals that matter to us."

This got me thinking about how I could edit out the fluff. I am definitely doing brunch at my wedding but I have been having such a hard limiting myself. I want a waffle station, omelet station, pancake station, beignets, french toast, coffee bar, juice bar, mimosas... and the list goes on!! I know I can't afford all these things but that doesn't stop me from wanting them with every bone in my body. THEN I saw this amazing post on Green Wedding Shoes.


I love the simplicity of this rooftop pancake affair. I have to believe that at the end of the day no one will care if they don't get to choose from 5 different exotic juices and 8 different coffees. I definitely do need to take a step back and figure out what's important to me.(hehehe... us, I suppose)
